Carol’s Easy Potato Soup

1/3 c. carrots, thinly sliced
1/4 c. chopped onion
2 T. butter
2 c. mashed potatoes
1 1/2 c. milk

In saucepan, cook carrots and onion in butter for 6 minutes. Stir in the potatoes. Slowly add enough milk for a medium-thick soup. Add some salt and pepper; heat. Serves 4 to 6.
