Tomato Sliced Potatoes

8 med. potatoes
1 (16 oz.) can stewed tomatoes
1/3 c. olive oil
1 tsp. minced garlic
2 T. parsley flakes
1 T. lemon pepper

Slice potatoes thin and arrange in 9×13-inch baking dish. Mix remaining ingredients together and pour over potatoes. Bake at 350° for 1 hour. Serves 6 to 8.
